Philippe Pacalet
Burgundy
A trained oenologist, Philippe Pacalet has been developing a very personal interpretation of the Burgundy terroirs for over thirty years. Nephew of Marcel Lapierre, he worked alongside him in his youth and also drew from the work of Jules Chauvet on fermentations. In 1991, he joined Henri-Frédéric Roch at Domaine Prieuré-Roch in Nuits-Saint-Georges, where he was the manager for ten years. He then created his own house in Beaune in 2001, which he now manages with his wife Monica.
Initially lacking a family vineyard, Philippe Pacalet built a micro-negotiant model based on a selection of plots and sustainable relationships with the winemakers who cultivate them. This organisation now allows him to work with a very wide mosaic of terroirs, from Chablis to Beaujolais, with a particularly significant presence in the Côte de Nuits and the Côte de Beaune.
Whole bunches play an important role in his work with reds, while the élevages are designed to complement each origin without standardising the wines. His approach primarily aims to maintain a precise interpretation of the place, the vintage, and the grape variety.
