Domaine du Chêne

Cognac

Founded in 1865 by Jean-Baptiste Doussoux, the Domaine du Chêne is a family-owned estate located in Saint-Palais-de-Phiolin, in the heart of Charente-Maritime. After a break during the war, distillation resumed in 1946 and the first Pineaux des Charentes were produced the following year. In 1993, Jean Doussoux and Jean-Marie Baillif developed the estate under its current name.

The Domaine du Chêne controls its entire production, the work of the vine, distillation, and finally aging in its cellar. Today, Jean-Marie Baillif works with his children, continuing the family tradition while developing a particularly wide range of Cognacs and Pineaux des Charentes. The estate is particularly distinguished by its work with rarer or forgotten grape varieties, notably Folle Blanche, Colombard, and Merlot Blanc, which are especially highlighted as single varietals.
